Urethane is short for it's full and official name: Polyurethane.

Polyurethane is a petroleum based product that has pretty much taken the place of varnish and shellac over the years because, unlike varnish or shellac, it doesn't yellow over time.

It is not a sealant as the first person mentioned. What it is really is a clear paint, a protective coating used to protect wood or other materials while not hiding the natural color or grains of the wood. A sealant could be used (like Thompson's Water Seal) before you use the polyurethane.

The down side to using a clear coat urethane is that it produces a very strong vapor that is flammable, stinks to high heaven and can damage your lungs while drying. After it's dried it's okay.

If you chose to use polyurethane make sure that you do so in a well-ventilated area and keep the doors and windows open whenever possible.
