It has turned green - what have I done wrong or what should I have put in it to preserve it.

it oxidized, next time use a little olive oil. It will protect it from the air which turns it green.

Ginger and garlic both will last a long time if kept with the skin on. My advise to you is crush these only when you want to use them.

You should have used it immediately. Fresh things don't store well without preservatives, so just crush what you need when you need it. Preservatives would probably change the flavor as well, and that's not good!

I crush mine all the time BUT I store it in the FREEZER.... Never turns any color and tastes as fresh as the day I put it in there.

Try the freezer next time by simply wrapping it in little plastic wrap bundles just right for your servings.

I think it used to be some sort of pasta salad. No don't eat it, I'm saving it to serve at my husband's next family/church picnic. Along with some special Kool Aid. Let me fix you some spaghetti with marinara and grilled vegetables.

Keep ginger in the freezer and grate it when you need it. Garlic should be freshly crushed or keep it in oil. You are losing me points with your silly questions or do you really not know anything about cooking or foods? You can e-mail me if you like. They both need oil to store in. Next time, use an extra virgin olive oil if your cooking a sauce in Italian. Use a light veggie oil for other cooking.

How long has it sat in your fridge?
Does it have fuzzes with the green?
Next time, put a little lemon juice with it and use in in 24 hours.

i heard if you put ginger in a container with some sherry it will keep for a long time

Why don't you just buy a small jar of each? They keep for a long time.
