Three ways that I can think of. One is a complete polar stereotype--evil with no redeeming qualities whatsoever. Of course Satan qualifies, but also more contemporary work like Sauron in Lord of the Rings, as well as his Orcs. Religion is really good at this sort of thing.
And then there is the kind of evil that is always mixed with good. Shakespeare was known for this. The gods and goddesses of ancient mythology fall into this group as well...sometimes beneficient, sometimes malevolent, depending on the mood of the god (or of the storyteller).
The last is what Stephen King is best at. Some people are basically good, with your normal flaws thrown in, and some people are basically bad, with a few redeeming traits. If a good person turns evil, there is always a point where a decision is made (I'm really thinking "The Stand" here), and once the decision is made, the person turns almost all evil, almost overnight. It's kind of a blend of the first two ways.

Ha ha, the first thing that pops into my mind when I read this was, "Does this guy ever read?"
Anyway, evil is depicted in a number of ways, from an outright evil world dominating villain, to the Devil, to something more subtle like a corrupt or immoral person, and much more. It relies greatly on the type of the story and the author himself.

That's a pretty broad question. You could say: "in Shakespearian literature", or in "Modern literature" - although in the latter case you would have to break that down too.
