I have a friend coming for dinner tomorrow night,he has a strict diet,no potatoes,rice,pasta , bread,red meat.What can I cook,that is lowfat,healthy and yummy still,and complies with his diet.

Lemon Chicken - Lightly flour 2 to 4 boneless chicken breasts and cook till brown in 1 tablespoon oil and 2 tablespoon butter or margarine. Remove the chicken from the pan and stir in 1/4 Cup lemon juice and 2 Tablespoons Parsley being sure to scrape the bottom of the pan. Pour the sauce over the chicken and serve with a tossed salad. Yummy!

I have a lot of great recipes that you could use. Chicken Parmesan is good but I'm not sure about the bread crumbs coating the chicken. Here is the recipe.
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian bread crumbs, parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings. or
Mushroom Chicken

4 chicken breasts
1 can cream of mushroom soup
1 - 8 oz container of sour cream
1 cup sliced mushrooms
1/3 cup sherry
1/2 tsp garlic salt
dash pepper
Combine all in a casserole dish and bake for 1 hour.

You can use lite soup and sour cream and the mushrooms can be omitted and it still tastes good.

well i wouldn't have invited him!!! Just kidding! He should feel proud to have you as a friend to go through so much trouble for him or her! Thats quite the diet by the way , he must weigh what 80 pounds? Try a nice chef salad with tangerines and a vinagrettte sauce. A soup would go well and chicken seems to be the only option, a nice chicken breast and maybe some asperagus or other fresh veggies. good luck!

A great start would be a simple salad made with baby or spring greens, dried cranberries, walnuts, and tossed with a vinegarette dressing. Then, a main course of grilled or oven broiled Salmon, served with fresh, sauteed veggies such as green beans and baby carrots would be good. Maybe even add some sliced almonds to the veggies. For desert you could serve a dish of sliced fresh fruit (such as strawberries, mangoes, peaches, etc.) sprinkled with a sugar substitute or a non-dairy, reduced calorie whipped topping.

I really enjoy just baking chicken breasts. I usually throw a little onion salt or some other seasoning to taste. Add a salad and a fresh veggie and that sounds like a great lowfat meal to me.

can he eat pastry chicken and mushroom vol au vent is always a winner followed by a nice grilled salmon fillet with a creamy shrimp or a lemon and dill butter sauce served on a bed of steamed mixed veg or side salad or a ratatouille finished off with a light dessert banana split or poached pear with butterscotch sauce even a nice simple fresh fruit salad is so underrated make it a bit fancier by serving it with some homemade ice cream if you need recipes for anything here just ask im here for a while

Boy this is a hard one!
Chicken, Turkey or fish with steamed or stirfried veg, or salad.
For dessert a fresh fruit salad.

You could try Bell peppers stuffed with chicken and veg so everyone could have the same. It would make life easier for you.

PESTO & PARMESAN CHICKEN with MEDITERRANEAN ROASTED VEGETABLES
Rub chicken breasts with fresh green pesto sauce (from chiller cabinet in supermarkets). Sprinkle with freshly grated Parmesan. Wrap loosely in foil. Bake in oven alongside chunks of Mediterranean vegetables drizzled with olive oil and seasoned with freshly grated black pepper and sea salt.
Examples of vegetables:
Quartered red and green peppers
sliced courgettes
wedges of aubergines
halved plum tomatoes
wedges of red onion
whole mushrooms

Duck breast with black cherry sauce, served on a bed of raosted courgettes. Yum Yum and the colours really compliment each other.
