The potatoes have just been sitting in the cupboard, and I was wondering if eating potatoes that have sprouted means they are rotten.

If your potatoes are sprouting, they're not exactly rotten, but they are FAR away from their prime. If only the eyes are sprouting, gouge them out with the scoop end of your peeler or cut them out with a knife. If the sprouts are longer than a hallf an inch, just throw them away. Potatoes are members of the nightshade family, of which most members are poisonous, so when the potato starts its growing cycle, it also becomes poisonous, and plus, once they start to grow, they just don't taste like potato anymore.

The chemical in question is solanine, a toxin that forms in the sprouts and green parts of potatoes. You can avoid it by cutting away sprouts ("eyes") from potatoes and peeling them below any green layer. And don't eat any potatoes that taste bitter; the flavor might indicate the presence of solanine.

No - sprouts don't mean it's rotten. Just remove the sprouts - unless the potato is mushy - it's fine to cook and eat.

it is safe to eat them, just take the sprouts off and the potatoe is still good.

Not necessarily, peel them and remove the sprouts, they are just roots and the potato should still be eatable.

I have eaten them. Just pick off the little sprouts. If they are wrinkled and grey, throw them out!!!

They're fine as long as the potato is still firm and white inside.
