Moti Choor ladoo
Ingredients For Boondi:
2 1/2 cups of Gram Flour (Besan)
1/2 tsp. of Cardamom Powder (Ilaichi Powder)
500 ml of Whole Milk
3 cups of Clarified Butter (Ghee) (for deep frying)
Strainer Spoon (fine-holed & shallow)
Ingredients For syrup:
2 1/2 cups of Sugar
2 tbsp. of Whole Milk
A few drops of Saffron (Kesri Color) (for deep frying)
3 1/2 cups of Water
Directions For Syrup:
1) In a vessel or pot put sugar and water and bring to a boil. Once the sugar dissolves, add in the milk. Boil for 5 minutes or until scum forms on top. Strain with the strainer spoon and return to stove.
2) Add in the saffron kesri color and boil until it is sticky but no thread has formed. Add in the cardamom powder and mix. Then set aside.
Directions For Boondi:
1) Mix the flour and milk together to a smooth batter.
2) Heat the clarified butter in a heavy frying pan. Hold the strainer on top with one hand. With the other hand pour some batter all over the holes. Tap gently until all of the batter has fallen into the hot clarified butter. Stir with another strainer and remove once it is light golden. Set aside. Repeat for the remaining batter.
3) Immerse the boondi in the syrup. Drain any excess syrup. Spread in a large plate. Sprinkle a few tsp. of hot water over it. Cover and set aside for 5 minutes.
4) Shape in round balls with moist palms. Cool and keep open to dry, before storing in containers.

[] Besan ke Laddoo
Ingredients: 2 cups besan (240 gm)
1/2 cup + 1 tbsp (150 gm) ghee
3/4 cup (180 gm) powdered sugar
1/4 tsp powdered chhoti elaichi (green cardamom)
Some blanched and slivered almonds and pistachios to decorate, if you so desire
Method: In a heavy kadahi melt the ghee and add the besan.
Stir fry over low heat (so that the flour is cooked through). Takes about 30 minutes for the flour to be cooked through. It gets a pasty look when done, and the colour should be a light brown/ochre.
Shut off the heat and leave the mixture to cool completely. If it does not cool completely, it will become `wet? when you add the sugar.
Add the sugar and the cardamom, and mix very well, rubbing it with your open palm against the base of the bowl. Rub till blended thoroughly.
Shape into tight, hard balls, pressing hard at every stage. In the final stage, keep it pressed a little longer, so that the surface is smooth (when the ghee comes in contact with the body heat, it melts and smoothens the mixture).
Decorate the top of each with the almonds and pistachios, if so desired.
Store in airtight containers and these will last 4-6 weeks.

4 cups besan (chick pea flour)
2 cups ghee (clarified butter)
2 cups powdered sugar
1 tbsp cardamom powder
PREPARATION:
Melt the ghee over a medium flame, in a thick-bottomed pan.
Add the besan and brown till you get a cooked aroma from it. The besan will also turn darker as it cooks and when done should be a deep golden brown color. This browning process can take up roughly 20 minutes.
Add the cardamom and mix well.
Turn off the fire and mix in the powdered sugar. Stir well.
Allow the mix to cool.
When cool, form into golf ball-sized rounds. Place on a lightly greased, flat tray till they set well.
Store in an air-tight container in a cool place.

In my language, Latvian, Ladus means ice, or freezing! But that is no help. I am sorry.
Ghee is clarified butter. The process is a bit boring, but go to any oriental grocery store and you will find it. Personally, I do not bother, I just use olive oil, but that cannot be used for really hot stuff.
