"Well John, maybe its because theres no salt in them! salt gives vegatables flavor. and without that salty flavor, there is just dull taste!

You are just so used to foods having salt in that, to begin with, stuff without added salt tastes bland. All processed foods have extra salt, as do most snack foods, and unfortunately a lot of canned foods.
We all know that too much sodium is no good for us, so if you try to cut salt out of your diet wherever possible, then you will start to appreciate the "real" taste of foods.
Why don't you try buying fresh vegetables every couple of days, instead of relying on canned veg. If you get organic, locally grown fresh veg, you will appreciate the taste much more.
I haven't added salt to my food, either during cooking or once on the plate for a good couple of years now. The food definitely tasted better. If you want to add flavours, try drizzling with olive oil, or sprinkling with freshly ground black pepper.

Salt's chemical composition makes our tastebuds more sensitive to individual flavors. So, when you add salt to your vegetables, your tastebuds are awakened to the flavors, which, you might have noticed on your first bite, takes a couple seconds to have the flavor really hit. If you need a test (because you don't believe me), eat an m&m or take a bite of fruit or something sweet/not salty. Then put half a pinch of salt on your tongue, swish it around for a second, then take another bite. See the difference?

Because in the canning process a lot of the flavor is lost, and salt helps to accent the remaining flavor back to something interesting.

Because they are all natural (no salt). We don't need the extra salt in our diets. I prefer to put seasoned pepper on my "no salt added" canned veggies just to make them taste better.

because your so used to eating food with salt and your taste buds have gotten used to the food u eat ALL THE TIME... so its like nothing bad or anything its just that your used to eating stuff with salt!!! xoxo

Because your taste buds are messed up. You can add flavor with lemon juice, other spices, no salt seasonings, etc.
