As I opened a bottle of diet coke, my cat came up started sniffing the bottle, so I stuck it under his nose and squeezed the bottle so the smell of diet coke went up his nose. He ran off and I havent seen him since.

Am I cruel?

I don't think you are cruel. Cats are so curious little things. Ours will get into anything to see what is going on. Ours likes to watch the bubbles of soda pop. But, when she goes up to the carbination bubbles, she gets scared and runs off. We tested it with a "flat" can of soda and she didn't run. Just don't let the cat drink the carbinated drink - it can clog the blood flow very fast. (sorry, a vet tech always has warnings. :)) Sounds like you have a cute cat though!

No. Cats are curious it is their nature. Our cat always wants to see what we are eating and drinking. It could of heard the fizz in the soda. If we open a Sprite our cat can't figure out why it makes noise.
