How can I check how many exposures there are on a Canon XTi camera?

And are there any hidden diagnostic menus on this camera?

The second part of your question leads me to believe that you're interested in the total actuation count. Unfortunately, there's no way of telling with the XTi.
You can with the 1Ds, you can with several Nikons (they 'secretly' store it in Exif), but with dRebels you're out of luck.
For what it's worth, the XTi shutter is RATED for 50,000.
