The cuticles lay flat when its straightened, therefore making it appear much shiner!

Smoothing the surface of the hair cuticle makes a better reflective surface, hence your hair looks shinier.

Light reflects off of smooth surfaces better than rough surfaces. I believe it's called deflection or something on rough surfaces. Don't you remember light science?
