I would suggest that you use Basmati rice. I have tried reheating the soup over several days and the rice didn't get mushy.

I never had a trouble with mushy rice in soups, but where i live, everyone uses Calrose rice for anything (not uncle bens or those types). Calrose is a type of sticky rice that is japanese originated. We usually cook it in a rice cooker first and then use it in whatever we want. I live in hawaii so it's easy to find it anywhere. The mainland is more difficult. You may want to try going to an Asian supermarket, or Filipino store for rice. Any rice that says "Rose" on it is usually the correct type.

You want to use a long grain rice, NOT a converted rice, such as Uncle Ben's, which has the rice polishings (a form of starch) removed and par-cooked.......Converted rices will get mushy in soups upon reheating due to the fact that they don't have the starch matrix to keep it from not getting mushy......To insure your rice NOT get mushy, add it 20 minutes before you plan on serving your soup........Don't use Arborio or short grained rices, they have too much starch in them....So go with any long grain white rice ( brown rice works well in soup, I just happen to prefer white rice to brown.....plus, you'll have to plan on cooking brown rice in soup for at least 45 minutes to an hour for it to be soft enough to consume....) Yum, Chicken and Rice soup.......

The starch in rice produce the mushy feeling, long grain does it less. stay firm longer.
Besides, you can throw the rice in the middle process of the soup so the rice won't be overcooked.

japanese people, much like the rest of the world eat all kinds of rice including short grain sticky rice, brown rice and jasmine rice. any vegetables in any combination go well with rice. leeks are a type of onion. miso is another name for soy sauce. some additional veggies - jicama, cauliflower, beans, string beans, water chestnuts, bamboo shoots, mushrooms, peas, sprouts of any kind, scallions, onions, garlic rice can be boiled or steamed. i've even done it in the microwave.
