1. Soup. Put it in a kettle, fill the kettle with water and cut up some onions. Cook it down for a while and add salt & pepper. Break up some some of the bigger chunks of meat so they are more like bite size. Once your meat is really tender and your broth looks like broth (and tastes like meat and onion), drop in some chopped carrots and celery. Also you could put in some chopped potatoes, or noodles if you prefer.
2. Do you have some leftover gravy and/or potatoes too? Because here's something else. You could make up a Bisquick crust, and put it in a 9x13 pan. Heat up the leftover meat, gavy and potatoes in a saucepan until it's heated. If you want it to go a little further you could put some milk and water in to thin out the gravy a little. Pour the whole thing over the bisquick crust and bake in the oven at 375 for about 30-40 minutes.
3. Shepherds pie. Cook up the meat and break apart the big chunks so they are bite size. Saute some carrots, celery and onion in a different pan with some butter. When they are cooked, sprinkle some flour over it all----a good 4 heaping spoons full. Stir it up for a minute or so, then pour some broth over it. Or, water and then add some beef bullion if you have it. After you cook it a while, put in a little worcestershire sauce (if you have it). Dump that into the leftover roast. Spray or butter a 9x13 pan and dump the meat mixture in. The, make some mashed potatoes and smear them all over the top. Sometimes I don't feel like making mashed potatoes, so I use a pie crust.

You can really dress it up without going to too much trouble. This is a super-easy and kinda classy pot pie. I take the leftovers, making sure they're in bite-size pieces, moisten them with the cooking juices (if there aren't enough, you can always resort to powdered gravy mix), and put them in a pie dish. It's a good idea to heat them up a little, either in the microwave or in the oven (covered with foil) because otherwise the crust might get too brown before the filling is hot. Use frozen puff pastry (thawed, of course) for the crust--you can buy it in any supermarket. Just cut a round of dough that fits the top of your pie plate; you don't even have to roll it out. Do be sure to cut a few slits in the top to let steam escape, though. Then bake it according to the directions on the pastry package.
You can add any vegetables that were cooked with the roast to the filling. Some mushrooms (halved and sauteed in a little butter) are a nice addition too. Hope this is helpful.

It really does depend on the potroast!
Leftovers for us Anglos consisted of mashed-potatoes and cabbage/peas... which led to "Bubble-and-squeak". When combined with leftover meat - the dish becomes a crispy/crunchy (on the outside) sort of 'hash brown' with substance... a fry-up in other words!

Shepherd's Pie.
Shred the leftover pot roast and put in a casserole dish. Add some frozen veggies (ex. peas, corn, carrots) to any leftover gravy and top w/ mashed potatoes. Top with shredded cheddar if desired.
Bake in a 375 degree oven for 30 minutes.

Beef gravy and vegetable and maybe some potatoes?
put a pie crust on it and its a beef pot pie, the pie crust can be store bought. and if you didn't make potatoes or veggies with the pot roast, you can put potatoes in the microwave and then cut them up and a bag of frozen mixed veggies can be heated the same way and then toss it all into a casserole dish with the pie crust on top. Or you can even put refrigerator biscuits on top, the kind that come in a tube, or use bisquick, just make sure your meat is hot when it goes in the oven.

Pot roast is similar to the mexican shredded beef dish Machaca. So just make some burritos. Take some of the pot roast meat. Put it in a flour tortilla, add some cheese and pinto beans. Roll the whole thing up into a really good burrito.

Chop it up, mix with BBQ sauce and have BBQ beef sandwiches.
Slice it, fix a pkg. of brown gravy, and serve it over bread or toast
Slice it, saute it with some peppers and onions, put on a hoagie roll with swiss or mozarella cheese

Ok, this is what i do. Cut pot roast into bite size pieces. heat on stove with leftover gravy. Bake off some refrig. biscuits. cut in half, pour pot roast and gravy over hot biscuit halves. Like a mock pot pie. My son loves it this way.
