You probably can't. Many people simply hate math.
That said, don't forget that math isn't just one thing. There is geometry, fractions, algebra, calculus, etc. etc. etc. What might convince SOME people that SOME math is interesting is to give examples of useful math that can be applied to daily life or to things that the other person IS interested in. Math is good for problem-solving. Math that is practical to someone's interests is going to be more interesting than math that is useless or too complicating to them.
So you cannot likely convince them that math is interesting, on the whole, but you MAY be able to convince them that SOME math is interesting.

Math is a touchy subject for some people...
Nothing else succeeds better at making people feel stupid and completely inadequate.
Who wants to do that to themselves on purpose? Especially a strict right brainer. We do not find Math interesting no matter how you shift and manipulate numbers...
The only way I was ever interested in Math, as a writer myself... was an interest in the lives of the Mathematicians themselves.

Read "God's Debris" by Scott Adams. It's a free download, or book at the store. Or "Da Vinci Code". Wasn't that proof enough that math can be interesting?
Math, as taught in school, is pretty dry, but as applied in clothing, drink mixing, car design, the pyramids, the Eiffel tower, the moon and the stars... math is The Party!

I agree with awinn83 and Evil Spoon.
Your friend might find math a little more interesting if/when its use becomes important to him/her professionally or personally.
For instance, I don't like math, but I like what it can do. I like information, and combining numerical data with organization and formulas in a spreadsheet like Excel gives me more information, without me having to worry about the having to do the grunt work of solving equations - I just need to know what equations to use for a given purpose.

I think your best bet is to convince her that Math is USEFUL and that having a basic knowledge of mathematics will make her life a great deal easier in the future.

Buy him/her a book called the Parrot's theorem by Denis Guedj. It is good fun, and explains the history and importance and excitement of maths.

You wont be able to if she hates it.
Im 23 and have hated it all my life. There is nothing interesting in numbers. They bore me to tears. Just becvause you like something doesnt mean she will.
Like me, I like history but my boyfriend hates it. Theres no convincing him that its really interesting.

You can't. Either you like it or you don't. But maybe you could do some research on the Fibonacci sequence, that is pretty interesting.
