Mini-Quiches
Ingredients:
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and
Some diced onion. This recipe only makes about
1 1/2 Dozen so be sure to at least double! Great

After work pick up a box of water crackers, cream cheese, smoked salmon, and a bottle of capers. Maybe a sprig of chives. Soften the cream cheese quick in the microwave (out of the foil of course), dump it into a baggie and snip off one end. Pipe that onto the crackers, put a little slice of salmon on it, 2-3 capers, and garnish with snipped chives.
Variations could be to put the salmon down first, or to use flavored whipped cream cheese like onion and chive. Should be done within half an hour!

Potato pancakes with avocado salsa (FingerFood)
Ingredients:
1kg potatoes, peeled
½ bunch shallots, chopped
2 large eggs
2 tablespoons self-raising flour
Salt and pepper
125ml (½ cup) oil, for frying
1 tablespoon butter
for the salsa:
1 avocado
2 large tomatoes, chopped finely
1 lemon, juiced
2 crushed garlic cloves
1 bunch chives, finely chopped
1 tbsp Hellmans Mayonnaise
How to cook:
Grate the potatoes (for easy use food processor) and squeeze out the water. Place in a bowl with the shallots, eggs, flour, salt and pepper and mix together well.
Heat the oil in a frying pan, then add the butter.
Drop dessertspoonfuls of the potato mixture into the hot oil and cook until golden brown on each side. Remove and drain on absorbent paper. Keep warm.
Mash the avocado, then add the diced tomato, crushed garlic, lemon juice, mayonnaise, salt and pepper.
Sprinkle the pancakes with chives and serve with the salsa.

Fruit and cheese, plate, buy cheese already cubed, have platter ready to put it on when you get home.
Make tuna or chicken salad and have it ready in the fridge. Make finger sandwiches, line platter with lettuce, place sandwiches on top, cut in 1/2 or 1/4's.
Buy ready made dip and wash up some fresh veggies.
Lots you can do in an hour.

buy packets of tortillas, and do some tuna fish, capers, olives some garlic and a small onion. that will be a dip. i usually use the oil with tuna fish... no need to add other stuff.
some tahini, canned and mushed chickedpeas, some garlic, and crushed nuts mixed together... serve with dry crackers
cubed cheese with toothpicks if you have you can add a cherry tomato to every cube, or half
and maybe some pate... but i think it needs more than an hour.

Julienne of raw carrot,red pepper and celery- just a slicing job here
Chorizo-sliced on French bread rings
Olives-green/black but pitted
Cheddar and Pineapple segments speared on cocktail sticks
Rolled Parma Ham with cream cheese on crackers.
Serve a mix of the above on large plates on which you've spread a bed of washed lettuce.Around the perimeter alternate sliced lemon and tomato wedges

PHILADELPHIA Fruit Dip
Prep Time: 5 min
Total Time: 1 hr 5 min
Makes: 1-1/2 cups or 12 servings, 2 Tbsp. each
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 container (6 oz.) strawberry low-fat yogurt
BEAT cream cheese and yogurt with electric mixer on medium speed until well blended; cover.
REFRIGERATE at least 1 hour.
SERVE with cut-up assorted fresh fruit.

I make this roll up that's cream cheese spread on a four tortilla shell and top with chopped black olives, chopped onions, and Green Chiles, roll it up and cut into 2 inch pieces.
You can also vary what you put in the shell,
it's a quick and tasty idea

crab nachos, combine crab meat, mayo, monterey jack w/ jalapenos top blue corn tortillas heat in oven top w/ salsa

goat cheese toast loaf of french bread sliced 1" thick , toast lightly, top with goat cheese, thyme, black pepper, drizzle w/ olive oil and broil til slightly bubbly not brown.
