INGREDIENTS
2 pounds ground beef chuck
1 pound bulk Italian sausage
3 (15 ounce) cans chili beans, drained
1 (15 ounce) can chili beans in spicy sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chile peppers, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
1 dark beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (e.g. Tabasco™)
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 (10.5 ounce) bag corn chips such as Fritos®
1 (8 ounce) package shredded Cheddar cheese
DIRECTIONS
Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.
** I like to add a 1/2 square of baker's chocolate and a cup of strong coffee to this as well.......

This is about as simple as it gets...I make this recipe for my family all the time and they LOVE it... One 64oz. bottle of V-8 vegetable juice 2 cans of chili beans 2 cans of diced tomato's 2 pounds ground beef (cooked and drained) 1 packet McCormick chili seasoning Put all the ingredients in a large saucepan and cook on a low to medium heat until mixture bubbles. Then let it simmer for about 15-20 minutes. Serve immediately. Optional: top with cheddar cheese, sour cream and diced onions.

Black Bean Chili:
1 pound boneless top sirloin steak, cut into 1-inch cubes
2 onions, chopped
1 medium-size green bell pepper, chopped
1 jalapeño pepper, seeded and chopped
3 to 4 garlic cloves, minced
1 1/2 teaspoons salt, divided
3 tablespoons olive oil
1 (28-ounce) can crushed tomatoes
1 (12-ounce) bottle dark beer
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon sugar
2 teaspoons dried oregano
1 1/2 teaspoons ground black pepper
1/4 teaspoon ground red pepper
2 cups beef broth
3 (15-ounce) cans black beans, rinsed and drained
Garnish: shredded Cheddar cheese
Cook first 5 ingredients and 1/2 teaspoon salt in hot oil in a large Dutch oven over medium-high heat, stirring constantly, 8 minutes or until beef browns and vegetables are tender.
Stir in remaining 1 teaspoon salt, crushed tomatoes, 1/2 cup beer, and next 6 ingredients, and simmer, stirring occasionally, 30 minutes. Stir in remaining 1 cup beer, broth, and beans, and simmer, stirring occasionally, 45 minutes or until thoroughly heated. Garnish, if desired.
Yield: Makes 12 cups

Chili Beans
Ingredients:
1 c Dried black beans
1 c Dried black-eyed peas
1 sm Ham hock
3 c Chicken stock or water or low-sodium chicken broth
Salt; as desired
Instructions:
THE NIGHT BEFORE, cover beans and peas with water and let stand to soften. Preheat oven to 275F. Combine beans, ham hock, stock or water and desired salt in a heavy 2-quart ovenproof pot, over medium heat. Cover, bring to a boil and place in the oven. Check the beans every 30 minutes and add 1/2 cup more stock each time if all the liquid has been absorbed. Cook for 1 1/2 hours or until beans are soft.

This is the lazy fast way I can make a pot of beans. Get a large can of Dennisons Chili and add cooked ground beef, onions, stewed tomatoes, celery salt, garlic powder, Pappy's seasonings, chopped green Ortega chilis and a touch of chili powder. Mix together and simmer for an hour or so. I like to top off the bowl of chili with chopped onions, shredded cheese and chopped green Ortega chilis. Yummy!! and fast.

i use ground beef that i cook first then i use two packets of chilli seasoning (from the grocery store) 2 cans of Goyo kidney beans 12 oz of tomatoe sauce and sliced onion sometimes i cook it in a crock pot or stove top it tastes really good Good Luck!
