These are all good suggestions. I would just like to add further that you should allow plenty of time to complete your journeys. Even though the distances are not great the roads are narrow and winding in comparison to the mainland. Also they will be wet and at times there may be ice. Just use commonsense and drive to the conditions, stop often and you will have a great time.
If you are driving along the Midland Highway stop in for a coffee and a look around at Ross or Oatlands. Oatlands actually has more historic buildings than Richmond I believe most of which are still in use as homes or businesses. It's not a touristy town but very attractive.

Port Arthur historic site

A Penguin Tour at Bicheno, or Lowhead

Low Head Pilot Station

Tamar Valley Wineries and vineyards

Stanley, climb "The Nut" and have a crayfish!

Evandale markets on Sundays

Great fishing..everywhere almost!

Launceston's Cataract Gorge

Deloraine, nice place to visit, have a coffee and shop around.

Queen Victoria Museum & Art Gallery (Launceston)

(I'd suggest not to bother with Strachan, so many people rave about it, but for the hours of driving, there's plenty of other more worthwhile things to see.)

Definately Coles Bay, Wineglass bay, Freycinet penninsula!

your best bet is to talk to locals most are friendly, strange but friendly haha and more than happy to tell you about their towns pride and joys of scenic splendour and other wonderful stories to be sure. The local pubs and there are many throughout will also provide a good homecooked feed and the worlds best beer(and we are not talking about that hobart crap) I mean BOAGS you must endulge your pallette of this and the finest freshest food you could ever hope to find.I also hear the RSL clubs are fabulous for the more mature traveller hehe. Yes there will be snow, rain, hail, wind and freezing cold temperatures at times but Tassie is magnificent in any season so come enjoy but take us as we are warts(deforrestation) and all

Take warm clothing. It is the middle of winter. There is lots to do in Tassie and any tourist web site will give you heaps of ideas. Be prepared for bad weather and don't plan any long walking trips such as Cradle Mountain/Lake St Claire without taking survival gear with you. You don't want to be caught up there in a blizzard without it.

Well there wont be a lot to do outside as the weather in july is generally not nice! I live here but June-july are my most hated months- expect it be wet windy and cold. I hate the snow but you may want to check that out if that your kind of thing. Most outdoor activities would be closed both due to weather and low tourist numbers and many are undertaking annual maintenance around that time. The things that I can think off are... wildlife parks like trowunna at mole creek, the cataract gorge in Lonny, salmander market in Hobart and the constitution dock area, penquin market in penguin, the nut at stanley (hopefuly the chairlift is working at that time of year). Sheffield is full of great murals, the lunar lanscape of queenstown (mining area). There may be some afl in Lonny but not sure of the roster. Tour the Boags brewery in Lonny and or Cascade in Hobart, tour Cadburys chocolate factory in Hobart, theres also anvers choclates on the way to devonport and a chese factory almost next door. You can tour lactos cheese factory down at burnie and the raspberry farm near deloraine is a good spot for raspberry treats and nice hot food on a cold day. The bridge at Ross is the oldest in the country and theres a really old unusual historical windmill at Oatlands. Theres lots of old buildings in almost any tassie town if you are into architecture. A drive over the batman brige near Lonny is worth while (as the thing frighteningly looks like its about to fall over) and you could always drop into beaconsfield where the great escape took place (but it is a pretty quite sort of a place). Theres the shot tower down Hobart way which is an intersting insight into how shot was made in the early days and frighteningly high too! and the tahune airwalk (amongst the trees) is popular. You could go to port arthur and check out the old historic building and drop by the blow hole at eagle hawk neck. There a various caves at mole creek and near hobart but they may be closed but it would be worth checking out a tourist info site. I have been told that the Hobart botanical gardens are worth a visit too. Of there are lots of vineyards around and some may still have tours/sales at time of year and there are a couple of liquor distilleries too I think ones in the north and one in Hobart but thats not my kind of thing so I am guessing there. The sea horse place at beauty point is worth a look. For the kids there are go karts near dport and in (Lonny too i think,) a giant maze at westbury, a roller rink in lonny.
I suggest that you have a fish around the following sites for suggestions.
