I seem to have a fridge full of cheese and eggs and am looking for suggestions. i have got 2 blue stiltons, some greek feta, some cornish yarg and some chintern cheddar with chives and shallots. I also have mushrooms, onions and about 20 eggs but am sick of omlettes please help.

boil some spuds , soate on pan with butter add anything , ham , ffurters, cheese etc............then add the eggs ( lightly whisked ) and after a few mins gentle pushing around hey presto ......even better with tomatoes and a bit of veg...sort of spanish omelete

I don't know the recipe exactly, Alton Brown from the show Good Eats has something called Fort Frommage. He says you take any different cheeses you have on hand and blend them in a food processor with a couple of other ingredients for a nice cheese dip/spread. How about doing that and having a small wine/cheese get together? As for the eggs? How about making deviled eggs for the get together? :-) Or have a picnic!

umm ... cheese soufle. Separate and beat about 6 yolks, mix in heaps of greated cheese, salt and pepper. In a diff bowl beat the egg whites til stiff, fold in the cheese, pop into a soufle dish and put it in the oven - about 180 for 45mins. If you've not got a soufle dish, what about mushroom and onion quiche? Get a quiche dish and line with pastry, or I expect that you can buy the pastry shell if you wanna be lazy. Fry your onions untill nice and brown, add the mushrooms untill it's all caramalised together. Spread them out over the pastry. Beat 6 eggs, salt, pepper, and a tablespoon of cream or milk, poor over the mushrooms etc. Scatter chunks of feta around it and put it in the oven - about 180C for 50mins. Enjoy! xx

You could make nice cheese muffins ( with or without some shallots), as I did last weekend. Or make pan cakes and fill them with cheese? You only need some flower, baking powder and water / milk. Easy-peasy. Or French toast with cheese and mushrooms.

Or even better: Beat 2 eggs eggs in a bowl, and add some flower for a batter. Dip mushrooms batter and deep frie. Serve with a melted cheese sauce (cheese, milk, salt and pepper) and enjoy!

Get some tortillas and make scrambles eggs with the Cheddar, mushrooms, chives and shallots. Put the cooked egg mixture in the tortillas, roll and have a breakfast burrito!

P.S. If you have potatoes they are good in the burritos too!

Try this one. If you cook too much spaghetti put this in large frying pan with a little oil. Then add eggs, cheese, onions and mushrooms and fry for about 7 minutes.

Brunch Egg Bake

12 oz shredded Cheddar cheese (3 cups)
12 oz shredded mozzarella cheese (3 cups)
1 jar or can sliced mushrooms, drained (see note)
1/3 cup (sliced green onions
1/2 medium red bell pepper, chopped
1/4 cup butter or margarine, melted
8 oz cooked turkey-ham, cut into fine, julienne strips
1/2 cup all-purpose flour
1-3/4 cups milk
2 T snipped fresh parsley
8 eggs, beaten

In large bowl, lightly toss cheeses together.

Sprinkle half of cheese mixture in ungreased 13x9-inch
baking dish. In medium skillet, cook mushrooms, green
onions and red pepper in butter until onions
and pepper are tender.
Arrange vegetables over cheese.
Arrange turkey-ham strips over vegetables.
Sprinkle remaining cheese over turkey-ham. (*)

Heat oven to 350 F.
Lightly spoon flour into measuring cup; level off.
In large bowl using wire whisk, blend flour, milk,
parsley and eggs; pour over layers in baking dish.
Bake at 350 F for 35 to 45 minutes or until mixture
is set and top is lightly browned.

Let stand about 10 minutes. Cut into squares.

Garnish with red pepper and fresh parsley, if desired.

Makes 12 servings.

(*) To make ahead, prepare to this point;
cover and refrigerate.

NOTE: Instead of canned mushrooms, 6-8 oz of
fresh may be used. Saute them till brown.


Frittata
2 t olive oil, divided
1/2 c celery, chopped
2 garlic cloves, minced
1/2 t oregano, dried
1 T Parmesan cheese
1 T flat-leaf parsley, chopped, fresh
1/2 c sweet red peppers, chopped
1/2 c onions, chopped
8 egg whites
1/8 t black pepper, ground

PREPARATION METHOD

In a large ovenproof frying pan over medium heat,
warm 1 tsp. oil.

Add the red peppers, celery, onions, and garlic;
cook, stirring frequently for 4 to 5 minutes,
or until tender.
Remove from heat and set aside.
In a large bowl lightly whisk together the egg whites,
parsley, oregano and black pepper.
Stir in the vegetable mixture.
In the same frying pan over medium heat warm
the remaining 1 tsp. oil.

Add the egg mixture and cook until brown
around the edges.
Cover the pan and reduce the heat to low.
Cook for 3 to 4 minutes, or until the eggs are set.
Meanwhile, preheat the broiler.

Sprinkle the frittata with the Parmesan.
Place the pan about 5" from the heat and broil
for 1 to 2 minutes,
or until golden brown.
Serve cut into wedges.
Makes 4 servings.

With that lot I'd go for a mixed cheese and egg pie with mushrooms and onions.

Look on Google for souffle recipes. They usually contain eggs, cheese, mushrooms and onion. I'm sure you will fin a way to use your ingredients.

Sounds like you have the makings for a good quiche' or a the Italian equivalent the frittata both of which are baked egg pies.
