I opened a can of black olives last night, used a few. It said on the can to put them in a sealed container and refridgerate. How long will they keep?

Obviously it depends on many factors that we cannot account for like the original conditions of the olives, how well they were packed, expiration dates and storage conditions since opening. However, I pride myself in eating just about anything in the refrigerator that doesn't smell bad or look visibly spoiled. I've eaten tons of all kinds of olives including black canned olives over the years and always stored them in the refrigerator for at least a month at a time, and never gotten sick eating them. They might last longer if you transfer the olives and the packing liquid into a sealed plastic container designed for refrigerator storage.

Once open I would consume it all within a month if it is kept at 5 degree celcius and the lid is sealed. You can reseal it in vacuum bags if you have a vacuum machine. This keep it fresh for longer. The acidity and salt content of the brine should prevent growth of pathogens. The safe microorganism on fermented olives are lactic acid bacteria and yeasts. Just be careful that the container remain sealed because fungus from the air can grow on top of brine if kept open.

Do yourself a favour and don't buy olives in a can...

get them fresh...

and of course if you prefer the canned ones, the important part to remember is don't leave them in the can once it is open.

drain any water, add some oil and refrigerate...they will keep long enough....
