here i have a couple recipes :)
Broccoli Au Gratin
1 Package of frozen chopped broccoli (16 oz)
1 can of Cream of Chicken soup (undiluted)
1/2 cup shredded cheddar cheese
1/3 cup crushed butter cracker crumbs (like Ritz crackers)
Cook broccoli according to package directions and drain. Stir in soup
and cheese and put in a greased casserole dish. Top with cracker
crumbs. Bake uncovered in oven at 350 degrees for 15-20 minutes or
until heated through.
Broccoli Au Gratin
1 1/2 lbs. broccoli
1 can condensed Cheddar cheese soup
1/4 c. milk
1 c. Bisquick
1/4 c. firm margarine
1. Bring 1 inch of salt water to boiling; add broccoli. Cook until
stems are tender 12 to 15 minutes; drain.
2. Arrange broccoli in ungreased baking dish. Heat oven to 400 degrees.
Beat soup and milk with hand beater until smooth; pour over broccoli.
Mix remaining ingredients until crumbly, sprinkle over cheese sauce.
Bake until crumbs are very light brown, about 20 minutes.
Vegetable Gratin
- 3 medium carrots, peeled and sliced
- 1 medium cauliflower, trimmed and divided into florets
- 1/2 head of broccoli, trimmed and divided into florets
- 3/4 cup frozen small peas
- 1/3 cup package instant cheese sauce mix
(or 3 tablespoons prepared cheese sauce)
- 1 teaspoon Dijon mustard
- Salt and coarsely ground pepper
- 2 tablespoons finely grated Cheddar cheese
- 2 ripe tomatoes, sliced lengthwise
DIRECTIONS
Cook the carrots in a little boiling water for about 3 minutes.
Add the cauliflower, broccoli and peas, cover and cook
until the vegetables are just tender. Drain and put the
vegetables in a large, lightly greased flameproof dish,
cover and keep warm.
Make up the cheese sauce as directed on the package. Stir
in the mustard and the seasoning. Preheat the boiler to medium.
Pour the sauce over the vegetables and mix gently. Top
with the grated cheese and tomato slices.
Broil under medium heat for 5 minutes. Serve immediately.

Broccoli and cauliflower gratin
INGREDIENTS:
• 4 cups cauliflower florets
• 4 cups broccoli florets
For the sauce:
• 1/2 small white onion, minced
• 3 Tbs butter
• 1/4 cup all-purpose flour
• 1/4-1/2 cup white wine
• 1 tsp dijon mustard
• 2 1/2 cups milk
• 2 cups grated cheddar cheese
For the breadcrumbs:
• 1/2 cup bread crumbs
• 3-4 Tbs olive oil
PROCEDURE:
Bring a large pot of salted water to a boil to blanch the veggies before assembling the gratin. Make a cheddar cheese sauce by sauteing 1/2 of a small, minced white onion, in 3 tbs of butter in another deep stainless steel pot. Once the onions are soft, slowly stir in 1/4 cup of all-purpose flour and let that cook for 2 or 3 minutes to cook out the raw taste of the flour. Add a small splash of white wine (1/2 cup or less) and a tsp of dijon mustard. After 2 or 3 minutes, add 2 1/2 cups of milk and use a whisk to blend it together while it comes to a simmer. The flour acts as a thickening agent so keep your eye on the heat after it thickens up. You don't want it to burn. While that's happening, blanch 4 cups of cauliflower florets in the boiling salted water for about 3 minutes, scoop them out onto a large plate and repeat for the broccoli. While all this is going on, grate about 2 cups of cheddar cheese and make a breadcrumb topping with 1/2 cup of bread crumbs and 3 -4 Tbs of olive oil. Add the grated cheese to the milk and cook that until it's melted. Toss the broccoli and cauliflower into a 9 x 13-inch baking dish. You might not need all of the cheese sauce so add it a little bit at a time over and around the vegetables and then top it with some of the breadcrumb mixture. Pop the baking dish onto under a medium gril and keep your eye on it. It'll be done when it starts to brown on top.

I love them too. The other night made white potato, broccoli and cheese soup. Could have put cauliflower in it too. Something about those veggies that are very satisfying. You can prepare them many ways. I also enjoy breaking the cauliflower into pieces tossing them in olive oil with any spices you like and baking them in a hot oven until they are golden brown not too dark. The flavor is even more intense. Everyone needs to eat more dark green veggies they are so good for our health. Have a happy spring 2013.

To make it right you need to make a white sauce. Take 1/4 cup butter and 1/4 cup flour in a pot, stir until butter melts and it makes a roux (kinda like cream of wheat). Add 2 cups milk, whisk over med-high heat until it thickens. Take it off the heat, add shredded cheese, stir till cheese melts. Pour it over cooked broccoli and cauliflower in a casserole dish, top it with breadcrumbs and bake at 350 for 15-20 min. Yum

I just melt cheddar cheese in the microwave and pour it on. Or you can just grate the cheese and pour it over the hot broccoli and warm it a bit. No need to make those fancy au gratin sauces. This is just as good.
