I made a banoffee pie the cheats way (boiling the condensed milk for 5 mins - with sugar and butter). Left it in fridge to set but final product was very hard and chewy !!

The sugar to fat/liquid ratio is wrong - too much sugar which solidifies like rock! Less sugar or more milk and or butter. If you're using the method where you don't open the can of milk, I guess it's more butter less sugar.

The best BANOFFI Pie (sorry cannot abide the bastardised spelling;-)) has to be made with condensed milk boiled in the tin, luckily Carnation now do ready boiled condensed milk (already toffee), you can get it in Tesco. It's cheaper than Dulce de Leche as well!.

In the supermarkets you can buy a jar of toffee/caramel and it is delicious for banoffee pie - thats the real cheats way!!

Dulce de Leche - just checked it on the internet. They sell it in Sinsburys for definate. yummmy.

why dont you leave the condensed milk in the can unopened and boil covered in water for 40 mins.
leave to cool and when you open it it will be the most wonderful toffee and the perfect consitency.

unfortunately you have to do it the hard way for it to be nice! i know its typical isnt it!
