Most of the recipes without wheat are going to be completely gluten-free, which means that they will most likely be naturally a little lower in fat. I found some websites for you - not all are specifically low-fat, BUT if you look at the recipes there is actually little to NO fat in them.

Also, as a side note, if you find yourself trying to use recipes where you need some moisture but don't want to add fat, especially to lean meats, try grating a little onion (really - grating the onion gives you the juice but no onion chunks), adding applesauce if it's a sweeter recipe, or even adding any vegetables like carrots or celery diced very finely. This adds moisture and flavor without fat.
