I am lactose intolerant and need a butter substitue. I don't bake, so that's not a problem and I use olive oil whenever I can. However, olive oil doesn't seem to fit with some recipes. Example: Honey baked acorn squash has a butter glaze that you pour over the top.

Any ideas?

Fleischmanns have lactose free butter. There are also many brands of lactose-free magarines that are made from vegetable oil (eg sun flower and olive oil) as spreads

Many types of magarines today are made from vegetable oils (http://en.wikipedia.org/wiki/Margarine#Margarine_today) so there are a lot of choices

Use margerine. That is made with vegetable oils that is put through the hydrogenation process. This doesn't contain lactose.

Butter comes from cow milk cream that is churned. Because of the presence of lactose in milk, it will also end up in the butter.

If you really want butter, then buy lactose-free cream, whip it up and make your own butter (very expensive, though)
