Everyone I know from Hong Kong (both ethnic Chinese and HK-born foreigners) refer to themselves as "Hong Kongese", although I believe that some people use "Hong Kongers" too.

As for calling them "Chinese", I guess that's right in the context of the question (ie England/English, France/French), but being less pedantic about it, someone can be both, eg I think of myself as a British (nationality), English (where I've lived most of my life), half-Chinese (by blood), Londoner (where I currently reside).

Excuse me? Don't you know Hong Kong belonged back to China since 1st July, 1997? Of course they need to be called Chinese.

Chinese and they speak a dialect of Chinese for the region called Cantonese. Hong Kong is in Canton, China. As for when it was a British crown colony; you've asked your question so that it seems you want another answer. But, Hongkong Chinese or Hongkong British, etc.
