I remember she used to roll out the dough on the countertop
and use a knife to cut the dumplings into squares, any help is appreciated.

Well, my dear. Use 2 parts flour to 1 part water. Then roll roll roll until very thin. Old fashion means don't use measuring cups use parts. Hehe. Cook your boneless chicken pieces in a large pot until done. When the chicken floats its done. Brush melted butter on dough. Then cut into squares or strips. My Mom used a star shaped cookie cutter. Make sure chicken broth is at a rapid boil and drop dough in a few at the time to make sure is does not stop boiling. Add salt and pepper to taste. The trick is to use plain flour and make the dough thin!

Use bisquick combination. follow the guidelines for dumpling combination. Drop dumplings in with a young boil. do no longer stir. upload salt and pepper. waiting to serve. worry-free and magnificent!

This is the best! I make my dough homemade; just like I am going to make biscuits, using flour, buttermilk and a clump of Criso shortening. Use enough of these ingredients until you have a medium thick batter in a medium-sized or large bowl, depending on how many dumplings you want to make. Use your hand to mix dough.
Boil your chicken with water, salt and pepper, in a large pot with lid, on top of stove; either whole breasts, or whole chicken--whatever. When the chicken is fully cooked and tender, drop the dough small to medium sized clumps, ( I make drop dumplings unlike your grandma who sliced them) into your pot of broth leaving chicken in pot. Cook dumplings without lid, over low to medium heat for 10 minutes--remember uncovered. Then, cover pot with lid. Do not stir dumplings! I repeat, do not stir dumplings! Cook another 10 minutes with lid on. You may want to take the bones out of your chicken pieces before serving. Your choice. Perfect chicken and dumplings...enjoy!

Ms.T's recipe sounds great but I like to use flour tortillas for my dumplins. Just cut them up and add them to the mix. It's a lot easier than making them from scratch and they are really good dumplins.
