I sometimes make a delicious side dish by sprinkling a halved fennel bulb with parmesan and roasting it. I always seem to eat it with salmon and I was just wondering if anyone had any other ideas...

Fish & fennel is a combination made in heaven.
Try experimenting with other types of fish.

Preheat oven to 400 degrees F.

Place some room temperature boneless, skinless chicken breasts in a baking dish, pour 2 tablespoons of Italian dressing over each one and sprinkle with grated Parmesan cheese and black pepper. Bake for 25 minutes. Let rest 10 minutes before cutting or puncturing, to retain juices.

The chicken and fennel work really well together.

Basic cooking...

Fennel can be steamed, boiled, braised, or eaten raw.
To braise fennel, combine 2 sliced fennel bulbs and 1/2 cup chicken broth, vegetable broth, or white wine in a large skillet. Bring broth to a boil over medium heat. Reduce the heat, cover, and simmer until fennel is tender when pierced with a fork, about 20 minutes. Sprinkle with salt and pepper. Makes 4 servings. The stalks and feathery leaves can be used as a seasoning or garnish for soups, salads, and seafood. You can cut up fennel stalks and use the pieces as you would celery: on a vegetable platter, in a stuffing, or in a tuna fish salad.

Fennel has an affinity for fish. In France, for example, fish is often baked in a bed of sliced fennel bulb. You can grill fish over fennel stalks or add fennel leaves to the poaching broth for a large salmon.

you can slices of raw fennel , similar in taste to anise, are served with oranges, tomatoes and garlic toasts

A tasty casserole of minced lamb, fennel and artichoke hearts cooked with rosemary, coriander and tomatoes.

Quick Fish Chowder with Tomato & Fennel

Mediterranean Chicken.
Chicken, Fennel, green beans, and white kidney beans.

Try a pork chop. Or Trout is another traditional thing, with mashed or roasted potatoes. Or boiled.

That is all I know, I am afraid as I do not like fennel.

Some yummy pasta side dish or polenta may be good with that fennel and salmon.

Fennel is a natural combination with any fish, not just salmon.
But try it also with a chicken dish, such as chicken cordon bleu - or chicken saltimbocca (roll up some pounded breasts with sliced ham and cheese, and braise in a shallot & wine reduction).
Great also with Chicken Marsala.

Try seasoning chicken with it. Maybe a Rosemary and Balsamic Vinegar chicken breast topped with some creamy wine dijon mushrooms along with the fennel...

I love both fruits and fruit and vegetables better, regardless how they look and taste. You desire a little of both.
