~~~~~ Champagne Laced with Raspberry ~~~~~

Serving: 2
1 tsp framboise
1 tsp kirsch
8 ounces chilled extra-dry champagne
Fresh raspberries for garnish
Pour half the framboise and half the kirsch into 2 chilled champagne glasses. Tilt the glasses to coat. Add the champagne and top with 1 or 2 raspberries.

~~~~~ Sauteed Asparagus with a Toasty Topping ~~~~~
Asparagus adds elegance to any plate.
4 servings
For the asparagus:
1 bunch asparagus, trimmed
1 1/2 tablespoons olive oil
Salt and freshly ground black pepper to taste
For the bread crumb topping:
1 teaspoon olive oil
1/4 cup fresh bread crumbs
1/4 cup chopped walnuts or almonds
1/4 teaspoon garlic powder
1/4 cup chopped fresh chervil
1 tablespoon chopped fresh parsley
Salt and freshly ground black pepper to taste
Set a large saute pan or grill pan over high heat. Rinse the asparagus well, but don't pat dry. Drizzle with the olive oil and toss to coat. Place the asparagus into the hot pan and season with salt and pepper. Toss several times with tongs, and then cover and reduce the heat to medium or medium-high. Shake the pan or toss the asparagus occasionally for even cooking. If the spears are beginning to burn, add 1/2 cup of water to the pan. (Alternatively, grill over a hot fire for 4 to 6 minutes.)
To prepare the topping, set a small skillet over medium-high heat and add the oil. Add the remaining ingredients, swirling in the pan and toasting lightly until fragrant and slightly crunchy. When the asparagus is just tender enough to eat and slightly charred on the outside, it's ready to serve. Remove to a warmed serving platter and top with the toasted bread crumb mixture.

~~~~~ Cornish Hens with Strawberry-Balsamic Sauce ~~~~~
Perfect little birds.
2 - 4 servings
For the hens:
2 Cornish game hens, rinsed well and patted dry
2 tbsp olive oil
Salt and freshly ground black pepper to taste
For the sauce:
1/2 cup seedless strawberry jam
1 1/2 tsp balsamic vinegar
1 tbsp white wine
1/8 tsp freshly ground black pepper
Salt to taste
1 dried Thai chile
Preheat the oven to 425 degrees F. Rub the hens with olive oil and season generously, inside and out, with salt and pepper. Tie their legs together with kitchen twine. Place the hens, breast side up, on a wire rack set over a baking sheet and roast until the juices run clear or a thermometer registers 165 degrees in the thigh, about 25 to 35 minutes.
While the hens are roasting, prepare the sauce. Combine the strawberry jam, vinegar, wine, pepper and salt in a small saucepan set over medium heat. As the jam begins to melt, add the Thai chile and let steep for 5 minutes. Taste the sauce; if you prefer something spicier, cut the chile in half and stir the sauce to distribute the fire. Remove the chile when the desired spiciness is reached. Serve as a sauce for the roasted hens.

In the United States and Britain, banoffee has become so popular that it is almost replacing Mom's apple pie. The reason for this extraordinary success? The unique flavor combination of its ingredients: bananas with caramel on a cookie-crumb base with a pinch of salt. All it needs is the chocolate.
Serving: 6
14-ounce can sweetened condensed milk
1/2 cup graham cracker crumbs
1 tbsp unsalted butter
3 bananas, sliced
Juice of 1 lemon
7 ounces milk chocolate
Whipping cream, to serve
Make a small hole in the can of condensed milk, place it in a pan of simmering water and leave to simmer over low heat for 2 hours. Remove the can from the pan and leave to cool.
Melt the butter and combine with the graham cracker crumbs. Place a stainless steel ring on each plate, then press the mixture into the base of each ring. Leave to cool.
Toss the sliced bananas in the lemon juice to keep them from turning brown, then arrange them on the crumb bases. Pour the caramelized milk over the bananas.
Melt the chocolate in a microwave oven or in a bowl over hot water. Pour the chocolate over the caramel and leave to chill and set in a refrigerator for 1-2 hours.
Just before serving, whip the cream, then carefully remove the rings by gently pressing down on the chocolate disks. Decorate with a little whipped cream and leave the banoffee to settle and ooze out deliciously on each plate.

Asparagus in Ginger and Satsuma Sauce with Heart Crisps
Ingredients
white potatoes
vegetable oil
asparagus
1 satsuma
ginger
Asparagus
Trim off the bottoms and put into a pan of boiling water for 2-3 minutes. Drain and put on the plate.
Orange and Ginger Sauce
Chop a 1cm square piece of ginger into small cubes and place in a saucepan with the grated rind and squeezed juice of a satsuma.
Heat in the pan and simmer for 5 minutes.
Sieve off the sauce and add 2 tablespoons to the asparagus.
Heart Crisps
Peel the potato then cut into thin strips. Cut the strips into heart shapes using a cookie cutter.
Heat the oil in a frying pan until very hot. Carefully put in the potato strips and fry until golden brown, turning over so they cook on both sides.
When they are ready drain off the excess oil and pat off with kitchen roll.
Take care to make sure the sauce is kept to a minimum. If there is too much the ginger might be too strong and it may leak onto the crisps and make them get soggy.

Kedgeree, although strictly speaking it is a breakfast dish. But for me it is sheer comfort food, and the simpler the better. Rice, egg, fish. That's all. My wife adds things to it - tomato, parsley, etc - but I leave it simple. Having written about it, I think I will now go and make a small dish.

The best thing is making something you know she likes..and trying to make it yourself (I think)--she will be pleased taht you tried to make it for her on your own--adn you will score way points for it--Have some back-up pizzas etc if the recipe doesn't quite work out--and you can have a candlelit dinner etc--and cake and chocolates and roses--but don't shy away from making the effort--you might find you do a good job and regardles it is the gesture that counts--she is lucky you are thinking this way...
So--basically--make what she likes--even if it's tricky--becasue the gift is that you are attempting to make it

It depends on what she likes. If she's a hearty eater you can't go wrong with broiled steak,baked potato and salad. If she likes to eat lighter, a nice pasta with lots of veggies and some good bread is nice. Don't forget the wine and chocolate covered strawberries!

BREAST OF CHICKEN FLAMBÉ WITH BRANDIED CHERRY SAUCE FOR TWO
This delicious and romantic meal should quickly warm your mood for the evening!
2 8ounce chicken breasts with bone and skin
1 ounce melted butter
1 teaspoon paprika
1 ounce brandy
1 pinch salt and white pepper to taste
Bing Cherry sauce
1 8 ounce can black bing cherries
2 tablespoons Burgundy wine
2 tablespoon sugar
1Ž2 teaspoon cornstarch
1 pinch salt
Preparing Bing Cherry Sauce: Drain juice from cherries. Combine juice with wine, sugar, cornstarch, and salt; mix thoroughly. Bring mixture to a boil until sauce thickens. Add the drained cherries.
Season chicken breast with salt, white pepper, paprika, and brush with butter. Bake for 30 minutes at 325°F or until cooked and tender. Place chicken in a medium size ovenproof serving dish and cover with sauce. Have table set, candles lit, all accompaniments on table, and turn off lights when ready to flambé.
How to flambé: Pour 1/4 ounce of brandy over dish and place in middle of table. Using long wooden matches, ignite chicken breast. When flame goes out and liquor has burned off, you are ready to serve.

Heart shaped pancakes.....pour them in the skillet in a wy that they'll be heart shaped...three circles poured into a shape like a triangle.....with pink strawberry coolwhip? don't know how it would taste with pancakes....but it sounds cute ...and pink!!!!
Hope it helped!!!!!......also Hallmark ...as in the card stores ...has mugs for cocoa that are heart shaped where the drink goes.....
sugar cookies decorated with pink icing and 'red hots' candy in the shape of letters that spell something on the plate......
or a heart shaped pizza!!!!!!!! Roses are going to be $250.00 on V-day , so maybe buy her carnations..they last longer!!!!!!
