No engine paint on those years. The best bet is to paint the engine Ford Blue. It will make any chrome or aluminum to really stand out.

A few years ago HOT ROD magazine entered in the 24 hours of LeMons race series with a stock Lincoln Mark VII or so, and they picked that car because it was basically a 5.0 Mustang with an air suspension and a really nice interior. They didn't finish the race. The weak areas were the cooling, specifically the transmission. The car just started slowing down, and they would frequently pit to let it cool off. They really pushed it to its limits, and eventually it just puked transmission fluid and coolant all over the pit area. Get a trans cooler, and maybe a bigger radiator. It's probably a good idea to install a bigger Shelby style 7 quart oil pan, which has fins cast into the aluminum to help cool the oil.

Mine (1985 Mustang GT ,T -top, manual, 460 premium sound system) was painted black from the factory. I remember it well. I bought 9 miles from the factory. I had to change the clutch often. I remember, the block was black.
I found a photo of an '85 5.0 and it look s like the heads are a dark grey. http://www.flemworld.com/85/info.html

I think 83 on Ford had change the color to grey to save money. They might have had some that were still blue, but I doubt it.

Every good car parts store knows the Old Ford Blue. If you can't figure out a way on your own you should just buy a Dodge.

ford blue us the textured paint on the oil pan though it adheres alot better I reccomend the high temp stuff like hammerite.it will last alot longer and wont peel.even after steam cleaning.
