LEMON PARMESAN ASPARAGUS
1 1/2 lbs. fresh asparagus
1/4 cup lemon juice
3 tbsp. grated parmesan cheese
Trim tough ends off asparagus and cut into 1/2" pieces. Steam asparagus until crisp-tender, about 8 minutes. Place asparagus in a large bowl, drizzle with lemon juice and sprinkle with parmesan cheese. Toss well to coat and serve.
RISOTTO WITH GARLIC AND PARMESAN
1 14.5-ounce can low-sodium chicken broth (plus water to equal 2-1/2 cups)
3 tablespoons olive oil
1-1/4 cups (8 ounces) arborio rice
3 large cloves garlic, minced
2 tablespoons freshly grated Parmesan cheese
Freshly chopped parsley, for garnish
Bring the broth to a boil over high heat. Cover; reduce to low and keep at a simmer.
In a medium saucepan, heat the olive oil over medium heat. Add the rice and stir for about 1 minute to coat all grains. Add the garlic and cook an additional minute. Add about 1/2-cup of the simmering broth and stir well. Stir often until the liquid is absorbed. Add another 1/2-cup of the broth and repeat the process. It should take about 30 minutes until the last of the broth is absorbed. Regulate the heat if it appears that the liquid is absorbed too fast.
When the rice is done, add the Parmesan cheese and stir well to combine. Garnish with the parsley. Serve immediately.

LOVE the shrimp wrapped in bacon-Most people only do scallops! So anyway, either a fettucini alfredo with asparagus would be great.Or even a pasta carbonara (that is kindof like a bacon and egg sauce) if you wanted to echo the bacon in your side dish with a salad!

Brown rice, sliced (lengthwise) string beans fried in olive oil; and, NEITHER overdone. A good barbecue sauce for the shrimp (frugally applied before serving) and, to top it off, compliment the dinner with a good chilled glass of Chardonnay (or if your prefer, a white grape juice).
Quiet, and appropriate (for fine dining) background music and low lighting is also recommended.
Enjoy!

Mashed potatoes with garlic chives and butter, and steamed asparagus or broccoli seasoned with soy sauce or oyster sauce. Very simple, nicely colorful. If you don't eat white carbos, make oven fries with the peels left on instead. Chive flowers would look gorgeous as a garnish to this meal.
Have strawberries or strawberry sorbet for dessert, and you've got one colorful meal!

I have never had such an entree, but from the sound of it, rice or mashed potatoes. At least, that's what I would try first.
God bless.
