other than sugar please indicate some preservative in making dried fruit. =) could some one answer it thanks for the help

Sulfites. See the wikipedia entry below.

But some fruits are preserved just because drying them concentrates their natural sugars and they keep a long time. They don't need extra sugar or sulfites.

Ideally none. Some use sulfur dioxide to keep color, but some health issues have been associated with this.

Sugar tends to be used in dried fruits to make the dehydration process cheaper, to make the fruit look nicer (since most naturally dried fruit turns basically black), and to gain appeal from the McDonalds crowd.

I like to use a few paper A/C filters and a fan to dry my food out, it is fast, chemical free, and uses no heat. Ugly, but tasty and healthy fruit.
