yes anything that could have killed you died while the cake was baking..... don't sweat it.
If you can make banana nut bread with rotten bananas .. old sugar is OK!
Keep baking and watch your labels next time :)

I'm wondering exactly what could happen to sugar for it to be considered "expired"? I know you're going by the date on the package, I just wonder how it was determined how long sugar could be considered to be "good".
Anyway, I once bought a pound of sugar for a dinner party and never opened it.2 years later I had a lover who used sugar in his coffee and he used it and it didn't hurt him at all,so I think you're safe.

To the best of my knowledge, baking soda doesn't spoil, but it can lose its effectiveness after a period of time. Usually when stores print an expiration date, its because they can't sell it according to FDA regulations. In the cases of yeast, baking powder, and baking soda, the longer the substance sits on the shelf the less effective it becomes. Your cake is fine, although its not as tall as you'd hoped.

OH, sugar is sugar. the only thing that can happen to it is that
1. it sticks together because of humidity
2. it takes a stale taste (off), because of the paper wrappings
3. ants get into it (you would have seen that)
The molecule is stable, it does not mold, it does not ripens and rot, it does not get salmonellas. It is a non-perisheable item... like oil, rice, pasta, dried pulses (beans and lentils)...
Factory put a stock date on... nowadays they would validity date your bum if they could... only what happens past that validity date?? just kidding.

If the can was sealed it probably will be OK, but if the container was opened then the icing may be rancid and may contain harmful and possibly fatal bacteria. The usual rule is when in doubt, throw it out.

Sugar is immortal. Eat it and enjoy, but save some for me. Bacteria can't even live on pure sugar. It absorbs water and sucks them dry.

It doesn't really go bad but it can absorb odors and flavors from wherever you store it. It can taste sort of stale too but it won't hurt you.
