Was wondering of someone could tell me HOW to fry the wings:
a) in a pan with just a bit of oil?
b) in the deep frier ?
c) in the oven maybe, without frying them?
Which is the best way? Thanks in advance for your help:) I'll throw a party tomorrow night and I'm planning to prepare Buffalo Wings too;)

b.) in a deep fryer
INGREDIENTS
24 chicken wings
2 quarts vegetable oil for deep frying
4 tablespoons butter
1 tablespoon distilled white vinegar
5 tablespoons hot pepper sauce
salt and pepper to taste
DIRECTIONS
In a large skillet or deep fryer, deep fry chicken wings in oil until done, about 10 minutes. Remove chicken and oil from skillet/fryer, drain oil and reserve chicken.
Melt butter/margarine in skillet, then add vinegar and hot sauce. Season with salt and pepper to taste. Stir all together. Add cooked chicken to sauce and stir over low heat to coat. The longer the wings simmer in the sauce, the hotter they will be. Serve warm.

Deep frying is the best but not the healthiest of course. The key is that the wings have to be dry (so make sure they are fresh and pat them dry with non printed white paper towels). This improves the texture.
Make sure the oil is nice and hot. It only has to be filled 1/4 of the pot. Gently place them into the pot. Don't drop them in or you will burn yourself from the splashing!

Boil them for 10 minutes
Broil in the oven until they are golden brown and crispy (15-20mins)
Melt butter
Pour butter, and Buffalo sauce in a large ziploc bag
Add wings
Shake until all coated.
They turn out so well this way. They are as crispy as deep frying, but a lot less calories and fat.

RESTAURANT-STYLE Buffalo Chicken Wings
INGREDIENTS
oil for deep frying
1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings
DIRECTIONS
Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

Deep frying tastes the best. I do it in a pan most of the time though. If you put them in the oven they get slimy.

a) use enough oil to half cover the chicken, use medium-high heat. don't forget to turn chicken. degrease chicken with paper towels on a plate
b) use medium heat for deep-frying, put chicken in that metal-wire frier so you can drip-dry later
c) when using oven only the chicken's own oil is used, elevate the chicken with chopsticks underneath to prevent sticking. microwave using medium-high heat. with a regular oven broil quickly else they burn or bake evenly. you may use drippings for gravy (cooked with flour paste, garlic and seasoning)

I would say sprinkle them with a good coating of spices and then bake them in the oven. That way they do not shrink too much and there will not be too much fat involved.
Serve them hot, or cold, with a spicy dip of sorts!

BUFFALO WINGS
3 lbs. chicken wings
1/4 lb. butter
3 tbsp. Tabasco sauce
1 tbsp. cider vinegar
Peanut oil
Separate the chicken wing drumsticks from the wing tips. Deep-fry the chicken in medium-hot (380 degree) peanut oil five to eight minutes; drain on paper towels.
Melt the butter in a large frying pan. Add the Tabasco and vinegar. Roll the chicken wings around in the mixture to coat them. Serve with Blue Cheese Dip and celery sticks. 6-8 servings.
OR
Baja Buffalo Chicken Wings
1/3 cup lime juice
1/3 cup tequila
1/3 cup chopped chipotle peppers in adobo sauce
1 Tbsp. garlic salt
1 Tbsp. ground red pepper (cayenne)
2 lb. chicken wings, separated at joints, tips removed
3/4 cup BULL'S-EYE Raging Buffalo Barbecue Sauce
2 Tbsp. sliced green onions
COMBINE lime juice, tequila, chipotle peppers, garlic salt and red pepper in large resealable plastic bag. Add chicken; seal bag. Turn bag over several times to evenly coat chicken with the lime juice mixture. Refrigerate 30 min. to marinate.
PREHEAT grill to medium-high heat. Remove chicken from marinade; discard bag and marinade. Grill chicken 15 min., turning occasionally. Brush lightly with some of the barbecue sauce. Continue grilling 4 to 5 min. or until chicken is cooked through, turning and brushing frequently with the remaining barbecue sauce.
PLACE chicken on serving platter; sprinkle with the onions.
OR
Spicy Sesame Buffalo Chicken Wings
1/4 cup sesame oil
1 Tbsp. garlic salt
1 Tbsp. ground red pepper (cayenne)
2 tsp. ground ginger
2 lb. chicken wings, separated at joints, tips removed
3/4 cup BULL'S-EYE Raging Buffalo Barbecue Sauce
2 Tbsp. sliced green onions
COMBINE oil, garlic salt, pepper and ginger in large resealable plastic bag. Add chicken; seal bag. Turn bag over several times to evenly coat chicken with the oil mixture. Refrigerate 30 min. to marinate.
