i work in the kitchen, and this is a little trick i learnt from my senior.. quite funny though..
after putting em in ice water.. peel off a little shell from the top and bottom, then blow with ur mouth from either side of the hole.. and voila the entire egg comes out as if perfectly peeled..

Here's the best way that I have found... it was actually shown on a talk show a long time ago and I've had perfect hard boiled eggs ever since... start out with cold water... put the eggs in... heat to a boil over medium heat. When the water starts to boil. Take off the heat, cover the pan and let it sit for 10 minutes. After the 10 minutes, run cold water to cover into the pan. Pull the eggs out and roll each one across a flat surface to crack the shell. Then peel the shell off... comes out perfect nearly every time.

Here's a foolproof way to make hard-boiled eggs that works for me every time.
Place eggs in a saucepan. Cover eggs with cold water, and then bring them to a rolling boil over medium-high heat. Turn off burner and place cover on pan. Let eggs set for 19 minutes. Run cold water over eggs to stop cooking.
When eggs are cool enough to handle, tap eggshell all over with the back of a common teaspoon. Break away enough of the shell so that you can run the spoon between the egg and shell, loosening shell as you go. Real fresh eggs will be a bit harder to loosen, but this method works for me every time.

a big thing about getting the shells off has to do with how long they are cooked as well as how fresh they are.
use fresh eggs and put into pan before adding the water-- use cold water- just enough to cover
add salt to your water
bring to boil and allow to boil hard for just 4 minutes
remove from heat, pour water into sink and add cold water until pan is full-- add a glass of ice
let water come to room temp and peel your eggs then-- the shell should come off very easily for you...
break your shell in several places before trying to peel
usually the reson your shells wont come off is due to overcooking or not cooling properly

Ok, here's what I do and it works every time...
Once the egg has cooled, take a paper towel (or a cloth) and crack the egg a little...then, applying a little pressure, roll the egg inside the paper towel...just enough pressure to hear the "cracking" sound...remove the egg and the shell will peel right off.

Add a little bit of vinegar to the water. You don't taste it in the egg, and it makes it a bit easier to peel.

maybe you are not cooking them enough that's why you are having problems with peeling them.
make sure that the eggs have been solidified properly before trying to peel them.
i ve never had such problems. i normally crack them and peel them under cold water.
