Try using some of Rachel Ray's 30 min meals recipes. You can find them at foodnetwork.com
ALSO.... try this one
Easy chicken and rice
2 cups chicken broth
1 cup uncooked long grain white rice
2 boneless, skinless chicken breasts
salt and pepper
basil
rosemary
Using a small casserole dish, mix the rice, chicken broth, and a dash each of the seasonings. (you can taste the liquid and season to desired taste) Season the chicken breast with a little salt and pepper. Place on top of rice mixture. Don't worry if the liquid almost covers the chicken as the rice will absorb this. Cover and cook in a 350 degree oven for at least 30 mins until rice is tender and chicken is cooked through.
I serve this along with some french green beans. It's a quick and tasty meal.
