One of the best things to learn is a controlled breathing technique. I found that learning to focus on my breathing helped reduce panic when I had asthma attacks, and in general it is good for stress. There are a lot of resources for relaxation techniques on the Internet - breathing, imagery, writing can all help. Find one that works for you. Good luck. Oh, and another thing is that if a stressful situation keeps repeating, find the cause and try to plan ahead so it doesn't stress you out again.

Try doing Yoga. If you can't get to a class, try Yoga Dvds. Also deep breathing is helpful.
