we just bought one and the owner manual doesn't really say when to use it or why....it is very vague.
we can bake with it or without the fan on but we just aren't sure of what we are doing....

convection cooks with hot air. It is great for roasts or chicken breast. you can also use it when broiling, like melting cheese or browning the top of a casserole. Any breaded food will also cook nicely that way and requires very little added fat. Food tends to cook a little faster so keep an eye on what you are cooking.

I have used a convection oven for years and love it. Just use it the way you would normally use an oven except that the baking time is slightly less.

The fan circulates the heat so that there isn't the concentration of the hot elements directly on the food as it is cooking.
