I have even seen Christians say it about Jesus. Anyone care to explain?

Well, in a way, both mean the same thing: RIP = rest in peace; PBUH = Peace be upon him (or her).
What's the difference?... I don't think there is any. I'm used to saying PBUH, though. But for PBUH, you're more like "praying" FOR the person, you know? And for RIP, you're just saying, "Rest in peace," as if talking TO the person. Unless you say something like, "May he/she RIP," which would make PBUH and RIP completely the same.
Ohhh... and IMPORTANT thing is that PBUH can be used for people who're living (or then say, "peace be upon you" to someone); but RIP seems to be only for the dead.

Muslims always follow the name of Mohammed with "peace be upon him," or when they're online, they have an acronym like everyone else: PBUH. Now other people online are making fun of that.

Peace Be Upon Him (PBUH) is a Muslim thing. I don't know any Christian that does it.
