Cantaloupe Fruit Salad
This is the ideal summer salad to accompany whatever you're grilling. It's healthful, cool and pretty. And don't think that added sugar will improve the taste. The natural sugars in the fruit combine perfectly with the tartness of the yogurt for a delicious, refreshing side dish.
2 medium cantaloupes, peeled, cut into chunks
1 pineapple, cored, peeled, cut into chunks
1 cup raisins
1 cup fresh shredded coconut (or packaged coconut, if you don't have the time)
1 cup finely chopped walnuts or pecans
1 large apple, cored, unpeeled, cut into chunks
1 cup plain yogurt
1 teaspoon grated orange peel
Stir together the yogurt and orange peel. Chill.
Mix all fruits in a large salad bowl. At serving time, add the nuts and pour chilled yogurt mixture over fruit, toss, and serve.

EASIEST EVER FRUIT SALAD

1-30 oz. can fruit cocktail, drained*
1-11 oz. can mandarin oranges, drained*
1- 20 oz. can pineapple chunks, do not drain*
2 firm bananas, sliced approx. 1 in. thick, optional
1 box instant vanilla pudding *


Combine all ingredients, stirring until dry pudding moisture is fully incorporated into the fruit mixture. Salad will appear to be runny, but will thicken as the pudding absorbs the pineapple juice. Chill for at least 1/2 hour or overnight. Stir before serving.
If salad sits for longer than 4 hours before serving, I have found that it is best to add the optional sliced bananas just before serving, as they will brown slightly, however, it will only affect the appearance, not the flavor of the salad if the bananas darken.

Variations include adding other canned or fresh fruits, using another flavor of pudding mix, such as lemon, coconut, banana, etc. When my children were younger I would add marshmallows or shredded coconut, or even chopped nuts.

*Note: as a diabetic, I use fruit canned in juice instead of syrup, and sugar-free instant pudding. This does not compromise taste or quality. My family actually prefers it this way. When you serve this salad, you WILL get many compliments, and even recipe requests. Whether or not you feel guilty, because it was so easy is up to you - :o)

FILIPINO FRUIT SALAD

1 can (17 oz.) fruit cocktail
1 bottle (10 oz.) sweetened Kaong (sugar palm)
1 bottle Avoset Cream (green label)
1/2 can sweetened condensed milk
1 bottle sweetened young coconut
4 tbsp. grated Cheddar cheese for topping (optional)
Mix all the ingredients, chill and serve cold.


FRUIT PIE OR SALAD

1 (8 oz.) cream cheese, room temperature
1 can Eagle Brand condensed milk (chilled)
2 tbsp. lemon juice
1 lg. container Cool Whip

Mix first 3 ingredients in mixer; then whip in Cool Whip.
Add:


1 sm. can crushed pineapple, drained
2 #2 cans fruit cocktail, well drained
1 sm. jar maraschino cherries, drained & chopped
1 c. miniature marshmallows
1 c. chopped pears
3 lg. bananas, sliced

To use as a pie make vanilla cracker crust in 9 x 13 inch dish or 2 small pans. For salad - do not use crust.

fruit salads are so wonderful...and in my opinion are so much fun to mix and add different textures with the fruit.
One of my favorite "fruit salads" is this one:

4 washed and cored apples chopped
1 cup washed and sliced celery
1/2 cup of chopped toasted pecans, walnuts or almonds
1/2 cup golden or dark raisins
1/4 cup rum
1/4 cup sugar or Splenda

1 can mandarin oranges drained
1/2 cup seedless grapes

do all the chopping then set aside in a big bowl
mix the raisins with rum and sugar set aside to plump up
for about 15 minutes
Dressing:
in a small bowl mix together 1/2 cup fat free sour cream
1/2 cup fat free mayonnaise and 1/3 cup orange juice

Mix together and pour over the fruit...if this is not enough dressing you can add more of the same ingredients.

We have ambrosia as one of our traditional dishes at Thanksgiving every year. Ambrosia is fruit salad with marshmallows and sour cream. It is great!

The main trick to a good fruit salad is to dice up the fruit and drain extra juice before mixing up all the ingredients. If you have time to plan ahead dice up your fruit (except the bananas) and put it in a steel bowl and store overnight to get the fruit thoroughly chilled. The next day before serving drain any extra juice that has built up overnight. Add the bananas before serving.

This is what we do for our ambrosia adding the sour creme, coconut and other ingredients just before serving.

It works out great.

Unfortunately yes, many fruits do get horrible if frozen, try to make less fruit salad also consider adding non fat whip cream to the fruit salad and addind raisings, coconut flakes, nuts, that is how I make mine and it lasts for two weeks on a closed container in my fridge.

Okay, my mom always made fruit salad two ways: 1) she just mixed up a bunch of your fav. fruits in one bowl and added a little sugar to your taste and served it that way. 2) the other way she made was: you will need- 1 can of pineapple chunks, 1 can mandarin oranges, 1 bunch of bananas, and 1 box of vanilla pudding. You make the pudding as directed on box drain oranges and pineapple (unless you want to substitute a little juice for the milk put in.) and then you add to the pudding the oranges, pineapples, and bananas depending on how many bananas you would want. chill it and serve it. It is really good.

Fruit salad
Ingredients
For the fruit salad
1 pink grapefruit
1 orange
1 pomegranate
1 banana
small bunch white grapes
small bunch black grapes
1 kiwi
1 pear
1 apple
sprig mint, to decorate (optional)
For the syrup
citrus juice (from above)
1 lime
100g/3½oz sugar
1 lemongrass stalk, sliced in half
1 thumb-sized piece ginger, roughly sliced


Method
For the fruit salad, segment the grapefruit and orange, catching the juices in a bowl. Squeeze more juice out of the remaining citrus fruit into the bowl. Set aside the orange and grapefruit segments.
For the syrup, measure the juice and add water to make 100ml/3½fl oz.
Peel a large strip of lime zest from the lime, avoiding any of the white pith. Reserve the remaining lime.
Combine the citrus juice/water mixture and the sugar in a small saucepan. Heat until the sugar has dissolved, stirring once or twice. Add the lemongrass, lime zest and ginger and then bring to a boil. Immediately reduce the heat to a simmer.
Simmer over a low heat for 10 minutes. Turn off the heat and leave the syrup to cool.
For the fruit salad, remove the seeds from the pomegranate and slice the banana.
Peel another slice of zest from the lime using a vegetable peeler, avoiding any of the white pith. Slice it very finely and reserve this for decoration. Set aside the remaining lime as you will need the juice.
Cut the grapes in half and slice the kiwi.
Finally chop the pear and apple, pouring a little lime juice over the apple to retain its colour.
Combine all the fruit in a large bowl or in individual serving dishes or Martini glasses. Pour over the syrup, to taste. You may not need to use all the syrup – any remaining syrup can be used in cocktails or added as a sweetener to herbal tea. Decorate with strips of lime and a sprig of mint.

It's pretty easy...just buy all the fruits you like in equal weight amounts or close to it. Then Take the skins off of fruits that need it. Then cut them up into bite sized pieces and refrigerate until served.
