Buttercream Frosting
1 cup butter, softened
6-7 cups powdered or confectioner's sugar
6-9 Tbsp. milk
2 tsp. vanilla
PREPARATION:
In large bowl, cream butter until very fluffy. Add part of the sugar and beat again. Continue adding sugar and milk in small batches, alternately, beating until very fluffy. Stir in vanilla.

You can use food coloring to color this frosting or as I have at times, used unsweetened powdered drink mix. (like Kool Aid)

This Recipe is from my Larousse Gastronomique cook book
A.K.A:- A Chefs Bible...
To cove a 20cm (8 in) in diameter Cake..
*I egg white
*175 grams Icing Sugar
*A few drops of Lemon juice

(1) In a medium size bowl lightly whisk the egg white and add
the sugar stirring continuously until it forms a mixture that
is thick enough to spread without running...

At this stage you can add a few drops of food dye or
flavouring to the mixture..Remember that when you add
more liquid it will become more runny so adjust with
more sugar...

This recipe is very easy and the results are Great !Enjoy!

Okay, you mix in shortening, powdered sugar and a tsp. of almond extract. Taste and see if it taste sweet enough and if not add a little more powdered sugar until the right sweetness. It doesn't make a whole lot but it so easy to make up that it doesn't matter if you have to make up more to use.

I would do the butter cream recipe and stay away from using shortening since it contains trans fats
