I mean cats may be many different colours but look mainly the same. Or cows all look like cows, but dogs vary so much from breed to breed. How do we know they are all dogs.

Their DNA and their ability to breed with each other and produce healthy and fertile young shows that however different breeds may be they are all the same species.
Cats,cattle,horses etc were never selectively bred for different jobs in the way dogs were which is why they look alike.

Dogs have been domesticated much longer than most other animals (and maybe all other animals), so they have received more diversity from selective breeding. Plus, they have made over 700 breeds.
