There are a couple of things that you can try. First though, pork gets tough and dry when it is over-cooked. There are two basic solutions. My first choice is to cook it less. This works best with premium cuts, such as the tenderloin or chops. Brown it first and then finish in the oven. Pork can be cooked to medium (or even medium rare) and is generally safe for consumption, in the U.S. This doesn't take long, you can use a meat thermometer for thicker cuts. This will give you a nice moist piece of meat. The second solution is to cook it a lot. This works best with lesser cuts of meat or with sauces. The technique is called braising, which you can do in the oven or on the stove top. This is done by browning and the simmering the pork for several hours, until it is fork tender. 1. choose a cut of meat. Keep some fat on. that'll help you stay moist. Pick a thicker cut. Or don't pound your chop to paper-thin.
2. marinate. No salt in the marinate. Sprinkle on the salt right before baking. And I make sure my chops are close to room temperature (completely defrosted) after marinating in the fridge. Do not let your chops dry out in the freezer.
3. Bake time for less. Then bake them at 325-350-375 F for 20-30 minutes _per pound_ so they are medium rare/ medium / medium well. Then broil them on high for 5-10 minutes to brown the outside. US pork are free of parasites.

When baking, I always use Shake and Bake for pork. It works great, the chops taste good and they are moist. My mom used to make scalloped potatoes and place the pork chops on top after she browned them quickly in a fry pan. That also helped keep the chops moist.

Generally with pork you'd want to broil, grill, pan-fry or stir-fry. If your pork is dried out it's probable that you over cooked it. Your best bet might be to pan fry on medium high heat 4 mins per side then add a cup of liquid like broth or wine or some thing heat to boil and reduce heat, cover and simmer and cook till tender about 1 hour.

I wrap each chop individually ( I prefer pork loin cuts ) in foil, then pour over about a tablespoon of Campbell's condensed french onion soup and seal. Place in baking pan & cook low.....By sealing them & adding the soup, they stay moist & tender......

I take the pork chop put a bit of butter on it and they put it uder the broiler...watching 2 see when it is done. Works great!!

Make sure that the chops still have some of the marinade with it, cover it loosely with foil - worked for me!
