Want to know because I'm not Mexican but like bean, cheese and rice burritos, yet the open end has too little filling, the folded end has too much tortilla, so the middle seems the best spot to start. Unfortunately, then the open end gets messy. The burrito connundrum. (not enough calzones in SoCal).

i see your dilemma and i relate to your struggles. its all about trying to take the best bites at the best moments. you dont want to start eating with the weakest bite so you want to start in the middle. but by doing so, you risk ruining future bites by spilling. i agree with the toothpaste method and often use it myself. that is a good first bite because you can control the tortilla/content ration by squeezing more or less stuff towards the top. the middle is always good. i recommend a traditional approach from top to bottom, but if you find a way to alter this approach without spilling then i commend you. the last bite is very important and takes many years of burrito eating to master. the experienced burrito eater is constantly thinking about the last bite while working his way towards it. i used to use the 'controlled spill method' where you strategically drop the most attractive pieces of meat, etc. to the wrapper and scoop it up with the excess tortilla at the bottom. this method works for dry burritos, but not for the messy and wet kinds. for messier burritos, you might try using a complex method similar to the toothpaste squeeze where you push to open up the tortilla at the bottom half. the trick is to come as close as possible to opening up the burrito without actually spilling anything. once you have mastered this technique, you can take on any burrito anywhere. good luck.

I usually take the burrito and while it's laying on the plate, slowly squash the filling up toward the open end....think toothpaste. This way, the whole thing is filled evenly.

When I get to the bottom (because I agree with the too much tortilla issue), I simply tear off the tortilla that I'm not planning on eating and discard.

Easy as pie.

I start at the open end, but if there's too much empty tortilla, I either rip or cut it off or fold it over when eating them with my hands. If you're using a knife and fork, just cut it in half and start from the middle. Then you can leave the ends.

If you don't want half of it ending up in your lap, better eat it from the open side!
