I am Canadian and I will eat any type of food as long as it is good!
But they say foods like wild salmon, maple syrup, back bacon and poutine are Canadian.
When I worked as a server for the Prime Minister of Canada and we would leaders from other countries, the menu would have a "Canadian feel". The chefs would use Canadian products, we as Canadians make wines, cheeses, grow our vegetables and we often incorporate wild game, like rabbit, caribou and venison.
