For my dinner party for four, i was thinking off starting off with mushrooms. Then creamy chicken for main. Can you help make something out of this as this is as far as i got. (My partner doesnt like anything spicy tho)

Here's a chicken recipe, not spicy, that is very easy, a little bit elegant, and would be compatible with a starter of mushrooms.

Tarragon Chicken

--4 skinned and boned chicken breast halves (note: I usually pound the thickest part of the meat a little bit to help them cook evenly, but you don't have to do that)
--about 2 tablespoons of flour
--salt and pepper to taste
--1 tablespoon each butter and vegetable oil
--3 scallions, thinly sliced
--1 good handful fresh tarragon leaves, chopped
--1/3 cup dry white wine
--2/3 cup heavy cream
--2 1/2 teaspoons fresh lemon juice (OR tarragon vinegar if you have it or can get it--it's even better)

Pat the chicken dry, then dredge it in flour that has been seasoned with salt and pepper--shake off the excess flour. Meanwhile, heat the butter and oil over medium-high heat until sizzling. When hot, saute the chicken pieces on both sides until browned. Don't worry about cooking them all the way through--that happens in the next step; Remove the chicken to a plate and reduce the heat to medium low.

--Add the sliced scallions and chopped tarragon and stir briskly for no more than 20 seconds or so. Add the wine and let it bubble away another 20 seconds or so. Stir in the cream. Then add the chicken pieces back into the pan, turn to coat with the sauce, cover the pan, and bring to a bare simmer. Keep it at a simmer and cut into 1 piece of chicken to test for doneness after 10 minutes. You don't want any pink in the middle, but you don't want to overcook it either, which is easy to do with chicken breast.

--When done, remove the chicken to a serving platter. By now the sauce should be thick enough that when you drag a wooden spoon across the pan bottom, it leaves a bare "trail" that lasts a second or two. Taste to see if it needs any salt or pepper. Then stir in the vinegar. Pour the sauce over the chicken and serve immediately, with a sprig of tarragon for garnish if you feel like it.

This goes well with a rice dish, and mushrooms would be the perfect starter or side. Have a lovely dinner!

Mashed Potatoes (optional)
Candied Buttered Carrots
Easy Cherry Cheesecake

Stuffed Mushroom Caps:
Clean your mushrooms, remove the stems saute in butter with finely chopped onions, make a box of stuffing according to the directions add the sauteed mushrooms and onions. Stuff the mushroom caps, put them into a shallow baking dish and bake for about 20 to 25 minutes at 325 degrees.

Baked Chicken in Cream Sauce
Use what ever kind of chicken you like. I buy boneless skinless chicken breasts. Place them in a baking dish pour cream of chicken soup, or cream of mushroom soup, or cream of celery soup, what ever you prefer. Put cover on dish and bake in a 325 degree oven for about 45 minutes.

Rice and Broccoli:
You can use a mix from Uncle Bens or you can make your own.
Just cook some converted rice with chopped broccoli and butter

Candied Buttered Carrots
Clean and peel your carrots ( I use baby shortcut carrots, all they need is rinsed off and cut in half) Boil until soft, drain. Put about one cup of water, 1/4 cup brown sugar and about 4 tablespoons of butter. Heat until everything is dissolved and boiling add carrots to the sauce cook until the carrots are heated Through.

Easy Cherry Cheesecake:
graham cracker pie crust
Beat a 8oz package of cream cheese with a scant 1/2 cup of sugar until light and fluffy. Mix in a 8 or 12 oz. container of cool whip. Pout into pie crust. Pour on 1 or 2 cans of Cherry pie filling, put in refrigerator to set.

Well there is a Great recipe on the back of Campbell's soup can for cream of chicken,you just take a chicken breast and pour cream of chicken over it and bake it.Try mashed or baked potatoes and a vegetable with and some rolls and a nice dessert.Good Luck
