Is there any history or tradition behind this shape?

the historical reason is usually because they were baked in a wood fired oven with a heat source near one side (not even heat distribution all the way around)... the pizzas would have to be rotated partly through the bake to get an even char all the way around.. also it's easier to create a round skin from a round dough ball.

Actually, we don't just have the round shapes. I've been seeing square and rectangular shapes also served at most pizza places these days.

many companies sell squared or rectangeld pizza....but i would imagine it has to do with the way the toss the dough in the air. It flies round.
