What Exactly is Shortening?
The word "shortening" always confuses me. Is it "butter," "margarine," "lard" or something like "Crisco"? All of the above — technically. Shortening, in its most generic meaning, is any fat or oil that is used to make a short crust or dough (one that has a high ratio of fat to flour, and turns out tender, crumbly, and rich).
In general usage, when you see the word shortening as an ingredient in a recipe in this country, the author is referring to solid vegetable shortening, of which Crisco is the best-known brand.

Shortening flour is a base mix for making biscuits, pie crusts, or pastry dough. You can use Bisquick or make your own. Put flour in a bowl and cut the shortening in it until it becomes fine and crumbly. Store it in an air tight container to use later. Just take out the amount that the recipe calls for.

shortening is any kind of fat used in baking. It can be margarine, butter, crisco, etc. If it doesn't specify, use butter in a cookie recipe, and use crisco or margarine in other recipes.
