A baked (microwaved) potato with various toppings is about as easy as it can get, and we all know potatoes are comfort food. Try putting a little half and half or milk or broth on the potato before the toppings so it isn't so choky and dry. Then top with butter, or spaghetti sauce and parmesan cheese, or top with chopped onion and parmesan cheese, or try broccoli and cheese. Baked potatoes are cheap, comforting, and loaded with vitamins.

Chicken and dumplings, very easy comfort food. Even my 13 year old can make it.
Boil some chicken in water, add minced garlic and onion to the water while it boils. After the chicken is done pull it out of the water, chop it up then put it back in the broth, mix dumplings according to Jiffy mix box and drop into boiling broth by teaspoon full. broth will thincken up. season to taste. I have some leftover but it might not be so good when you get it! lol

You could always get some pizza, or maybe some Ramen...it all depends. If you have a slow cooker, then the next time you go to work, buy one of those slow cooker meals and put it on. Then, by the time you get home, your meal will be ready and all you had to do was put the food in the slow cooker and plug it in.

I would but I have guests coming tonight. Why not hire a personal chef to come to your home, cook a weeks worth of dinners and freeze them individually for you? They clean up after themselves and leave reheating instructions. It's real home cooking from your freezer.
Just a thought

I'd love to. How does potato-leek soup sound? I've spoken to the Soup Fairy and he'll try to squeeze in a visit this evening. But will you do my laundry in return?
Hang in there--we've all had days like that--in fact I'm having one now. :)
