Potato wedges signifies the shape of the potato. Home Fries could be any shape - Round, Square, Waffle Cut, Regular Cut

Hi there,

To the best of my knowledge, home fries are small or large cubed waxy-type potatoes and are cooked on a griddle or in a skillet with oil, salt, pepper and sometimes onions and green bell peppers.

Potato wedges would use a mealier type potato (all-purpose or even russet), they'd be cut into wedge shapes, tossed in seasoning and some oil and roasted in the oven OR deep fried like steak fries.

Most potato wedges are Frozen so I will compare them against the frozen home fries.
The wedges are washed , partially cooked, not peeled, cut into the wedge shape, deep fried then frozen.
the frozen home fries are partial cooked kind of mashed then add a a few other additives to hold them together then extruded on to a freezing belt for finish freezing.

I believe homefries are potatoes cut in cubes and browned on the stove. Can be served with breakfast. Potato wedges are potatos with skin on cut in 1" or so wedges and browned. Basically the only difference is how they would be cut and what meal they are served with.

Actually I think the only real difference is time of day. Served in the morning...home fries. Served in the evening....potato wedges.

Wedges are usually cut from smaller potatoes and have at least a full side that is the skin (or outter part of the potato), and a home fry is just a large french fry.
