I'd like to try frying the onion rings out of Nigella Lawson's Feast book. She suggests using a deep pan with oil to fry these. However all I have are 'regular' pans, baking ones. I live on the continent and I do have a frying pot, the plugged in appliance type which I don't see much of in England. Will it be ok to put the onion rings in batter in the basket and lower them into the fryer or will they disintegrate/will the batter come off?

You should be fine using the basket, just make sure the batter is very thick and the oil is very hot. Try dropping a piece of onion coated with the batter into it first to see what happens, remove with a slotted spoon.

heat your frying pot to the correct temp 180-200 centi, leave the basket down in the fat,dip yer onions in the batter and drop gently into the hot fat, only put in about 4-6 at a time, when youve dropped them in gently tap the basket off the bottom of the pot, this will shake the onions loose and they will float to the top of the fat, turn them when brown, drain well on parer and enjoy!

Just fry the buggersss until they are golden brown - easy as that - no fancy pans or anything - hot oil and don't cook too many at once. Plain flour and fizzy mineral water, salt well and thats a brilliant batter to coat your ingins.

The electric deep fryer will do just fine. Just make sure that it is set to high.

And... remember, the BIG secret about good, crispy onion rings, is to lay them in ice cold carbonated water for 10 minutes before you batter them and fry them.

The oil must be 375 degrees F or the onion rings won't brown properly.
