Steamed wild salmon (the salmon MUST be wild, not farm raised or wild caught) over orzo cooked in chicken broth with diced yellow, red and orange bell peppers mixed in.

While the orzo tastes best with the salmon, you can substitute brown rice, whole wheat couscous or wild rice.

Wild salmon is the best because the flavor is strong. With farm raised or wild caught salmon, you have to add butter or something to give it flavor.

My Best Tuna Salad:

Prep: 20 min., Chill: 1 hr.

1 (9-ounce) can solid white tuna in spring water, drained and flaked
1 medium-size red apple, peeled and finely chopped
2 hard-cooked eggs, grated
1 small carrot, grated
1/2 cup finely chopped green onions
1/4 cup diced celery
1/4 cup mayonnaise
1/8 teaspoon salt
1/8 teaspoon coarsely ground pepper
12 whole wheat bread slices
6 lettuce leaves

1. Stir together first 9 ingredients. Cover and chill 1 hour.

2. Cut and discard crusts from bread slices, if desired. Spread 6 bread slices evenly with tuna salad. Top with lettuce and remaining bread slices.

Yield: Makes 6 servings

Left over white rice, noodles done in a cream cheese sauce. In fact, any time you have rice or needles of any type, make an extra serving so that you have some left over.
If you like you can even use these left overs for a quick dessert by adding eggs, sugar and whatever flavorings or fruit you have, including old bread for a casserole or cobbler.

I would have to say salads...You can do a lot with them (just make sure you're not adding unwanted calories with TOO many fatty topings such as cheeses and meats). You can use a hearty lettuce such as romaine then top with cheese, olives, cucumbers, bell peppers (any color), onions, carrots, brocolli, cauliflower, and then grill up some chicken to top it with or even slice up lunch meat (any kind) or even tuna.
