I've got a very easy and healthy recipe for grilled chicken breasts with salsa and Monterrey jack cheese. You can add vegetables or salad if you want, but the salsa has lots of veggies in it, and I like to add like to add chopped cilantro to it.
You can use an outdoor grill or skillet, either one works. Brush however many boneless skinless chicken breasts you want to cook on one side with canola oil. Put the oiled side down on the cooking surface. Brush the top side with canola oil also. While chicken is cooking, mix chopped cilantro into the salsa if you like it that way. Cook chicken 5-15 minutes depending on how hot the surface is. Turn when it's starting to look cooked. Spoon salsa onto cooked side of chicken, lots if you like it, less if you don't. Put a slice of Monterrey jack cheese over the salsa, cover with aluminum or skillet lid so cheese will melt over the salsa. Serve with black beans (I like to sprinkle beans with grated sharp cheddar cheese) and/or Spanish rice. Easy and fast, just make sure the chicken is cooked through, no pink on the inside.

Make them a dish you know you can make, but stop worrying about impressing them. They aren't going to judge your cooking, they are going to appreciate you making something for them.
Or better yet, have them make dinner WITH you because then you get to spend more time with them AND share the process AND learn some cooking skills along the way.

I cooked spaghetti for my grandparents, who are also the best cooks ever. It went well, and they just loved that I was having them over for dinner.

Olive garden reicpes. They are amazing and really are not that hard to make if you can follow a recipe. I made their Tuscan Garlic Chicken recipe and it was AMAZING. I love to cook and this was probably the best thing I have ever made. Go to:

Did they ever teach you how to cook a certain dish? If so I would make the dish they taught me. If not, you can never go wrong with a basic dinner like meat, potatoes and veggies.

I think that is so special! Make them one of your specialty dishes. Ask them to bring a few of their favorite recipes and have a recipe swap. It's a great keepsake to pass on to your children and your grandparents will appreciate it.

the easiest pasta recipe ever:
cook pasta of your choice.
toss with 1 small container of ricotta cheese, fresh basil (or other herb of your choice) and a bit of pasta water until it makes a sauce.
salt and pepper liberally and add parmesan cheese.
so simple, light, but so tasty.
serve with a salad, good crusty bread, and if you are ambitious, some roasted veggies.
To roast veg:
hot oven - 400 degrees
clean and trip asparagus spears, broccoli, brussel sprouts, pepper slices, halved tomatoes or green beans. (Pick one or more.) toss with olive oil and salt and pepper. Roast until starting to brown but still a bit crispy. Serve witha squeeze of lemon juice and parmesan cheese on top.
